Gluten-Free Fresh Veggie Pizza is the perfect summer food, full of vegetables and cooling to the belly and mouth. This recipe is a favorite as it can be served as an appetizer for a party, baby shower, bridal shower, etc. It is indeed a summer favorite at our house. Not to mention it is also delicious as well. In fact, it is also the perfect appetizer for Mother’s Day, Father’s Day, Summer BBQ, or dinner. Enjoy! Gluten-Free Fresh Veggie Pizza

By the way, I brought this Fresh Veggie Pizza to a homeschool party with high schoolers. Indeed it was one of the only things there that I could eat as it was grain-free and refined sugar-free. One of the moms has six kids and even her littles were asking for more.

Incredibly this is my version of a Pampered Chef recipe that was very popular in the 1980s. I couldn’t find the original. I truly wish I could find those now Vintage recipes from Pampered Chef. In fact, this recipe is very versatile as kinds of cheese can change or put on your favorite vegetables. Of course, it can also be topped with grilled chicken and other herbs like basil and fresh tomatoes, and mozzarella. In fact, if there is a vegetable you don’t care for just omit it and add one you do like.

Family Favorite:

Gluten-Free Fresh Veggie Pizza is sure to become a family favorite as it is one of ours. Moreover, I love that it is healthy and loaded with tasty vegetables. Moreover, if leftovers are still good the following day, just place any remaining slices in plastic wrap and place them in the fridge. By the way, it is rare that we have Vegetable Pizza leftovers.

Incidentally, this Veggie Pizza can be made with my individual Pizza crust while adjusting the amount of cheese and vegetables you place on the individual pizza. Just reduce the amount of cheese and veggies by 1/3 or make everyone their own individual pizza.

Gluten-Free Fresh Veggie Pizza Notes:

Indeed I have had this pizza many times over the years. In conclusion, place cheese and veggies on sheets of wax paper. To conclude spread the Ranch Cream Cheese over the top of the pizza crust. Immediately followed, by topping with the cheese, and lastly, add the veggies. Lastly for appetizer slices cut the pizza into 24 slices. Perfect for tailgating or Super Bowl parties.

In order to make this pizza, you will need to make my Ranch Cream Cheese Spread.

Gluten-Free Fresh Veggie Pizza

Ingredients:

  • 1 recipe ranch cream cheese
  • 1 recipe Family Size Pizza Crust
  • 3/4 cup chopped cauliflower
  • 3/4 cup chopped broccoli
  • 1/2 cup chopped cucumber
  • 3/4 cup chopped baby bell peppers
  • 3/4 cup chopped sugar snap peas
  • 1 1/2 cup shredded pepper jack cheese
  • 2 cups shredded cheddar
  • * optional 1 small can of chopped olives
  • *1/4 cup chopped green onions
  • *optional 1/8 tsp chopped cilantro or parsley
  • *1 tbsp optional radishes
  • *2 tbsp optional red onions

Directions:

First, make the cream cheese ranch and place it in the fridge. Let sit in the fridge for 3- 4 hours or let sit overnight. Make dough for a Family Size Pizza Crust. Preheat oven to 425 F. Run processor until it forms into a ball. Place two sheets of plastic wrap slightly overlapping down on the counter. Remove the dough from the food processor.

Place on top of plastic wrap and place two more sheets of plastic wrap slightly overlapping on top of the dough. Using a rolling pin roll out your dough to 14 3/4 by 10 1/2 inches. Bake for 5- 7 minutes. Remove from the oven and bake another 4 – 8 minutes until the other side is cooked. Next, allow the crust to cool.   • * 1 tsp chopped cilantro or parsley or both optional
