Bolognese is a classic Italian meat-based red sauce. It’s comforting, delicious, and totally filling, but when you need a quick meal, it’s probably not at the top of your list. After all, bolognese cooked the traditional way requires hours of simmering on the stove. Our Instant Pot Turkey Bolognese recipe, however, uses the high pressure of the Instant Pot to infuse rich flavors in much less time!

To build layers of flavor in our bolognese, we season the turkey with savory spices and herbs, including oregano, black pepper, and red pepper flakes. Then we brown the turkey in vibrant aromatics —sautéed carrots, onions, garlic, and thyme. Finally, we add tomato paste for a rich concentration of tomato flavor and a bit of sugar to cut any extra acidity.

FAQs

How do you get rich flavor in bolognese? ›

The best tip for intensifying the flavour of your sauce is just to cook it slowly on a low heat for a long time. This reduces the sauce and intensifies the flavours – four hours is not uncommon for my bolognese.

How do you balance bolognese? ›

Luckily, you can balance the acidity of a spaghetti bolognese that tastes a tad too tart by squirting some ketchup into the pan as it simmers. Ketchup subdues the natural acidity in tomato-based dishes because it contains sugar.

Why does bolognese sauce need to cook for two hours? ›

5. Around the two hour mark, the sauce should be thickened considerably, the meat melting into the tomatoes, everything tasting slightly sweet a little tangy, deeply meaty. If it still looks soupy or like the meat is not fully melted/incorporated into the sauce, it needs more time.

What is the missing ingredient in bolognese sauce? ›

If you are missing an umami note, it's possible you are missing a very common ingredient in bolognese - chicken livers. These give a meaty, almost sweet flavour. Soak them in water for a few minutes, then finely chop or pulse in a food processor. I use minced (ground) pork, beef and chicken livers.

Why do Italians add milk to bolognese? ›

According to our Food Director Amira, not only does milk add a rich flavour to the bolognese, but it also “helps cut through the acidity of the tomatoes and red wine”. She adds: “It also makes the mince meat nice and tender, creating that melt-in-your-mouth deliciousness.”

Why is my bolognese tasteless? ›

Your spaghetti sauce may taste bland due to insufficient seasoning. Try adding more salt, herbs (like basil, oregano, or thyme), and other flavor enhancers like garlic, onion, or red pepper flakes. Also, a dash of sugar can balance flavors and bring out the natural sweetness of tomatoes.

What thickens a bolognese? ›

As the sauce simmers, the water in it will evaporate and the sauce will get thicker. You can also add a little bit of cornstarch to the sauce to thicken it without changing the flavor. If you don't mind altering the sauce's flavor, try adding grated cheese, tomato paste, or even mashed potatoes to thicken it.

Why do you put sugar in Bolognese sauce? ›

The reason for sprinkling a pinch of sugar into a simmering saucepan of tomatoes is simple: sugar cuts the acidity of the tomatoes and creates an overall more balanced sauce. The exact acid levels in tomatoes can vary quite a bit depending on whether they're fresh or canned, the tomato variety, and the time of year.

How to jazz up bolognese? ›

Just add seasoning and the flavour will be completely different from what you're used to. You can add various herbs, too. Try a teaspoon of dried Italian mixed herbs (added at the start) or a tablespoon of fresh, chopped oregano (added towards the end) in the meat sauce.

Why add vinegar to bolognese? ›

And as an added bonus, both the plums and the vinegar have some great benefits for digestion, energy, and as an antibacterial boost. Umeboshi vinegar is a deep reddish purple. Perfect for adding both the depth of flavour and colour into our bolognese sauce!

What stock to use in bolognese? ›

Add 2 tins plum tomatoes, the finely chopped leaves from ¾ small pack basil, 1 tsp dried oregano, 2 bay leaves, 2 tbsp tomato purée, 1 beef stock cube, 1 deseeded and finely chopped red chilli (if using), 125ml red wine and 6 halved cherry tomatoes.

What is the difference between a bolognese and a ragu? ›

Ragu sometimes includes vegetable chunks, properly prepared Bolognese does not. Ragu typically uses red wine, while Bolognese calls for white. Bolognese uses very little tomato, while ragu sauces often feature tomatoes for most of the sauce's bulk.

Should Bolognese sauce be cooked with lid on or off? ›

Lid off will allow extra moisture in the sauce to evaporate and thicken it. So, if you want a thicker sauce, lid off. Thinner, perhaps less strong flavored, lid on. Super low simmer and slow, even heating is best for a long cooking tomato sauce.

Is bolognese better the longer you cook it? ›

Never rush a bolognese, good things take time. Cooking it for anything less than an hour is seen as rushed. We recommend 1.5 – 2 hours cooking time, or as much time you can spare the better.

How do you add richness to spaghetti sauce? ›

Use wine.

Both red and white wine work extremely well for adding flavor to tomato sauce. Red wine gives the sauce added richness and robustness, while white wine imparts a fruity flavor. Incorporate the wine early in the cooking process, just after the vegetables have softened.

How do you make sauce taste richer? ›

Saute Aromatics: Start by sautéing aromatic ingredients like minced garlic, onions, or shallots in olive oil or butter. This adds depth and richness to the sauce. Herbs and Spices: Add a variety of herbs and spices to enhance flavor.

Does bolognese taste better if you cook it longer? ›

Like most recipes the longer you leave it to slowly cook the better the flavour will be but this can also be knocked up with in an hour.
