This recipe is something I have made for years and it is always a crowd pleaser. My favorite thing about this recipe is that you can make it the night before 🙂 Enjoy this recipe from my kitchen to yours. I have included on how to make this recipe gluten – free below. I know this will sound very silly but this recipe really “sings” – meaning there are TONS of flavors that simply just work 😉

What You Need

  • flour tortillas ( corn if you want to make a gluten – free version)
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 Chopped Jalapenos ( seeded)
  • 2 teaspoons chopped green onion
  • 1/2 diced green pepper
  • 1/4 Teaspoon of Salt
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of garlic powder
  • 1.5 Teaspoons of pepper
  • 12 ounces sharp Cheddar cheese, grated
  • Salsa
  • 1 Tablespoon of finely chopped cilantro
  • 1 Teaspoon of lime juice and plenty of zest
  • 1 Tablespoon of Olive Oil

What To Do

1) Heat oil in a pan and add green pepper, Jalapenos , and salt. Cook till tender about 10 minutes

2) In a medium-sized bowl mix – cream cheese, sour cream, cheddar cheese, onion powder, green onions, garlic powder, pepper, cilantro, lime juice; sauteed green peppers and sauteed Jalapenos.

3) Heat of the tortilla in the microwave ( just 30 seconds) it makes it easier to wrap.

4) Place a “healthy” amount of mixture on a tortilla – and spread.

5) Roll and Set aside. Keep repeating steps 4 and 5 till you run out of tortillas or mixture 🙂

The one up top is my gluten -free version using a corn tortilla.

6) Place your “rolls” ( covered tightly) in the fridge for at least 5 hours or overnight.
When ready to serve, cut each roll into 1/2-inch slices.

7) Sprinkle with lime zest. Serve with salsa.

Enjoy

FAQs

How do I keep my pinwheels from getting soggy? ›

One of the best ways to keep wraps from getting soggy is by using the correct storage method. Parchment paper or wax paper is ideal for wrapping up your wrap when complete, as it not only keeps the wrap shaped correctly but it also allows it to breathe which prevents moisture build-up that makes wraps soggy.

How do you keep flour tortillas from breaking when rolling? ›

Warming a flour tortilla, either in a tortilla warmer ( a clay cloche that fits on top of a plate and can be placed in the oven) the microwave, or s few seconds on a warm skillet will add a flexibility to the flour tortilla, and allow it to be rolled or folded without breaking.

Can you prep pinwheels the night before? ›

Tightly roll up each of the tortillas and wrap each one in foil or plastic wrap; refrigerate the pinwheels overnight. Before serving, slice each roll up into ¼-inch slices. Arrange them on a platter or feed them to your ravenous family as you slice them.

How do you make wraps that won't get soggy? ›

Layer Ingredients Strategically

Start by placing a layer of greens on the wrap to act as a barrier between the fillings and the wrap itself. You can use lettuce, spinach or other types of greens. They will also help prevent the wrap from becoming soggy.

How do you get pinwheels to stick? ›

A sticky spread: Typically, pinwheels are held together with cream cheese, but anything similar (like hummus or nut butter) can be used. Deli Meat: Pinwheels usually include some kind of deli meat (turkey, chicken, ham, salami, etc.), but that can also be replaced with thinly-sliced veggies.

How do you roll tortillas without sticking them? ›

-Use a light touch and even pressure when rolling to prevent the dough from sticking to the rolling pin or surface. -If you're still having trouble, try using a round template (like a plate or lid) to trim your tortilla into a perfect circle after rolling it out.

Why are my taquitos not crispy? ›

Cook for 3 to 5 minutes, or until golden brown. Once they float, I leave them in for about another minute. If the taquitos are not crisp when cool, you haven't cooked them long enough.

Why are my tortillas hard to roll out? ›

What makes flour tortillas hard is not adding enough lard or oil and water and not kneading the dough for the required amount of time, and NOT allowing the dough to rest in a warm place at least 30 minutes before making flour tortillas.

Why are my tortillas breaking when I roll them? ›

Dryness, stiffness, and heat — oh my!

If you've made your tortilla dough earlier in the day and are storing it in the fridge, the cold dough will be drier and stiffer — two surefire issues that will lead to cracking. Even non-glutinous doughs get stretchier as they warm.

What should be done in preparing a pinwheel sandwich? ›

It's so easy to learn how to make pinwheel sandwiches. Just lay your preferred fillings onto the wrapper of your choice, roll up, chill, slice, skewer, and serve. Have fun making the sandwiches your own special way suited to your party's theme or the tastes of you and your guests. You hardly even need a recipe.

Why do my pinwheels fall apart? ›

Seam side down - Place the seam side down when cutting the wraps. This is another way to ensure that your wrap doesn't fall apart when you're slicing it. Less equals more - Don't overdo it with your fillings! Pinwheel rolls are much harder to cut, eat, and hold together if they're stuffed full of ingredients.
